Variety: Chardonnay 100%
Area of production: Vineyards situated in the cooler territories of Casalbordino with exposure prevalently to the north.
Soil/Altitude: Medium mixture soil, calcareus at an altitude of 100-150 metri above sea level.
Viticulture: Espalier culture with a desity of 3800 plants/ha and a production of 11 Ton/ha.
Harvest: Last week in August, reaching full technical maturity, by hand in the cooler hours of the day.
Vinification: Removal of grape stalks and contact of the skins with the must for 8 hours at the temperature of 8 °C , separation of the must from the skins and made limpid by decantation, then transferred to steel tanks for the alcoholic fermantation at a temperature of 18 °C
4-5 months in steel tanks, refinement in bottle for 10 days before being placed on the market. Store in a cool place at a temperature of 12-14 °C.
Brilliant, straw-coloured yellow with evident greenish hues.
Intense, fresh and fruity with note of tropical fruit and green apple.
Harmonic, supple and fresh with good body and persistent.
Hors d’oeuvres and dishes with fish with meats and fresh cheese. Ideal as an aperitif.
